The Colombia Alberto Ramos roast is a single origin microlot coffee from the region of Tolima.
This is definitely one for the filter lovers. A lighter roast with fruity tasting notes and a soft acidity.
Alberto Ramos inherited the La Floresta farm from his father, Gerado Ramos. He built a wet mill on the farm after taking over that gives him the advantage of being able to control what processing techniques he uses and experiment with new ideas. This has enabled the farm to produce high-end microlots.
This particular microlot is processed in a more traditional washed style. The pulped cherries are put in large ceramic fermentation tanks for a period of 34 hours, before being placed on raised beds to be shade-dried until the ideal moisture content is achieved.
